Prawn Pineapple

Prawn Pineapple
Ingredients
Prawns 300 gm
Lemon grass ½ tsp
Basil leaves 1 – 2
Curry leaves few
Ginger 1 tbsp
Garlic 1 tbsp
Oil 3 tbsp
Fish sauce 2 tbsp
Brown sugar 2 tsp
Fresh red chilies 2 – 3
Coriander leaves few
Boiled red chilies 5 – 6
Coriander powder 1 tsp
Cumin powder ½ tsp
Salt to taste
Black pepper powder ½ tsp
Coconut milk ½ cup
Pineapple 1 cup


Method
• Grind together 5 – 6 boiled dry red chilies, 1 tbsp ginger and 1 tbsp garlic with a little water to make into thick paste.
• Also add ½ tsp cumin seeds, 1 tsp coriander powder and few coriander leaves.
• Heat 3 tbsp oil in pan, sauté 300 gm prawns till its color changed. Remove in a plate and keep aside.
• Put prepared paste in wok with 1 cup pineapples, cook for 1 – 2 minutes, now add 2 tbsp fish sauce, 2 tsp brown sugar, 2 – 3 chopped fresh red chilies, few curry leaves, 1-2 basil leaves, ½ tsp lemon grass and few coriander leaves. Fry for 2 – 3 minutes.
• Now add ½ cup coconut milk, cook for 1 – 2 minutes. Lastly add fried prawns and mix well.
• Serve hot with boiled rice.
