Mango Quesadillas with Mango Salsa


Ingredients for stuffing

2 chicken breasts
1 egg
1 spring onion
1 capsicum
2 large mangoes
4 red chilies
½ cup tomato paste
½ mozzarella cheese
½ tsp black pepper powder
2 tbsp oil
Oil for frying
Salt to taste

Ingredients for pocket

200 gram plain flour
1 egg
¼ cup milk
Water as required
Salt to taste

Ingredients for Mango Salsa
1 small onion
1 tomato
1 red capsicum
¼ bunch parsley
1 tbsp lemon juice
2 tbsp oil
Salt to taste


Method
• Mix 200 grams plain flour, 1 beaten egg, ¼ cup milk, salt to taste and knead into fine dough. Cover the dough and put aside.
• For stuffing, make slices of 2 chicken breasts. Cut a large mango into cubes. Finely slice 4 fresh red chilies, 1 capsicum and 1 spring onion.
• In a pan, heat 2 tbsp oil and sauté chicken slices in it.
• When chicken begins to change color, add chopped, red chilies, capsicum, spring onion, ½ cup tomato paste and a chopped mango. Also add ½ tsp black pepper powder and salt to taste. Cook until excess water evaporates.
• For mango salsa, chop 1 small onion, 1 tomato, 1 red capsicum and ¼ bunch parsley. Heat 2 tbsp oil in a pan and sauté chopped vegetables in it. Also add salt to taste and 1 tbsp lemon juice.
• When vegetables are tender, turn off the flame and keep aside.
• Now take kneaded dough and form small rotis of it. Fill in chicken mixture and brush a beaten egg on corners. Fold in shape of half moon.
• Deep fry in oil as required and cut into half. Serve Mango Quesadillas with Mango Salsa.
