Ingredients:
- 1½ kilos of minced beef (or mutton)
- 1 packet of Shan shami kebab masala (or use instead: 1 tsp red chili powder, 1½ tsp salt, ½ tsp garam masala and 1tsp coriander powder)
- 1 medium onion, coarsely chopped
- 3 cloves of garlic
- ½ cup of 'daal channa' (split gram)
- 1 egg, separated
- 3 green chilies
- 1 inch long piece of ginger
Method:
Put all of the above except green chilies and ginger in a pot, add about 6-8 cups of water and cook on medium to high heat until the mixture is almost dry. Chop together three green chilies and a one inch long piece of ginger, and add to the cooked mixture above. Add one egg yolk.
Makes about 35 kebabs. Serve with coriander or mint chutney or with tomato ketchup. Appropriate as a side dish for dinner or served with tea.
