Ingredients
- 2 ounced EVOO
- 1/2 red onion, diced
- 4 Tbs black olives, diced
- 1/2 red bell pepper, diced
- 1 jalapeno, diced (he used fresh, I used pickled)
- 2 cloves garlic, minced
- 1/4 cup diced artichoke hearts
- 1 1/2 pounds ground chicken
- 1/2 tsp Hungarian paprika
- 1/2 tsp chili powder
- 1 tsp dried oregano
- 1 Tbs fresh parsley chopped
- 1/2 tsp red pepper flakes
- 1/2 tsp ground cumin
- 1/2 tsp celery salt (I used celery seed)
- 1/4 tsp ground sage
- 2-3 Tbs seasoned bread crumbs
- 1 egg
Directions
- In medium saucepan, over medium heat, add 1 ounce olive oil and all raw veggies
- Saute until translucent
- Remove and let cool
- Add veggies to raw chicken and mix thoroughly
- Add all dry ingredients
- Add egg
- Mix and form into patties
- Cover and refrigerate for 30 minutes
- In same saute pan, add remaining ounce of oil
- Cook patties 3-5 minutes per side
- Serve with favorite condiments on toasted, whole wheat bun!
