Shami Kebabs


Ingredients:

  • 1½ kilos of minced beef (or mutton)
  • 1 packet of Shan shami kebab masala (or use instead: 1 tsp red chili powder, 1½ tsp salt, ½ tsp garam masala and 1tsp coriander powder)
  • 1 medium onion, coarsely chopped
  • 3 cloves of garlic
  • ½ cup of 'daal channa' (split gram)
  • 1 egg, separated
  • 3 green chilies
  • 1 inch long piece of ginger

Method:

Put all of the above except green chilies and ginger in a pot, add about 6-8 cups of water and cook on medium to high heat until the mixture is almost dry. Chop together three green chilies and a one inch long piece of ginger, and add to the cooked mixture above. Add one egg yolk.

Now put the mixture through a chopper and make small round kebabs, 6 centimeters (2 1/2 inches) in diameter and one centimeter (1/2 inch) in thickness. Lightly coat each kebab with a little egg white and shallow fry until golden brown.

Makes about 35 kebabs. Serve with coriander or mint chutney or with tomato ketchup. Appropriate as a side dish for dinner or served with tea.
