Potato cakes with smoked meat and garlic sauce


Ingredients:

750 g potatoes
350 g smoked meat or ham
1-2 eggs
300 g flour
150 ml milk
200 g pork fat
salt
pepper
caraway seeds
4-6 cloves of garlic
marjoram

for the garlic sauce:
50 g plain flour
50 g butter
500 ml stock or water
10 cloves of garlic
salt

Instructions:

Peel the potatoes rinse, dry and grate. Then squeeze out the excess water and add some lukewarm milk. Add the eggs, flour, smoked meat or ham chopped into small cubes, marjoram and crushed garlic. Throw in a pinch of salt and pepper, then mix everything together. Fry disks of the mixture on both side in a small shallow frying pan.
Form a roux from the fl our and butter into which you add the stock while stirring all the time. This forms a thick sauce to which we add a pinch of salt and chopped garlic. Cook slowly for around 15 minutes.
Five or six potato cakes constitute a filling meal. Pour over the garlic sauce before serving.
