Chicken Patties Recipe


Ingredients
  • 2 ounced EVOO
  • 1/2 red onion, diced
  • 4 Tbs black olives, diced
  • 1/2 red bell pepper, diced
  • 1 jalapeno, diced (he used fresh, I used pickled)
  • 2 cloves garlic, minced
  • 1/4 cup diced artichoke hearts
  • 1 1/2 pounds ground chicken
  • 1/2 tsp Hungarian paprika
  • 1/2 tsp chili powder
  • 1 tsp dried oregano
  • 1 Tbs fresh parsley chopped
  • 1/2 tsp red pepper flakes
  • 1/2 tsp ground cumin
  • 1/2 tsp celery salt (I used celery seed)
  • 1/4 tsp ground sage
  • 2-3 Tbs seasoned bread crumbs
  • 1 egg

Directions
  1. In medium saucepan, over medium heat, add 1 ounce olive oil and all raw veggies
  2. Saute until translucent
  3. Remove and let cool
  4. Add veggies to raw chicken and mix thoroughly
  5. Add all dry ingredients
  6. Add egg
  7. Mix and form into patties
  8. Cover and refrigerate for 30 minutes
  9. In same saute pan, add remaining ounce of oil
  10. Cook patties 3-5 minutes per side
  11. Serve with favorite condiments on toasted, whole wheat bun!
